I think this is a Ptilotus sp. , known as pussytails or mulla mulla. I don't have much info on them but there are several different species, the leaves and flowers look similar to Ptilotus exaltatus except the flowers don't look pinkish, but I don't have any info on other species to make a comparison. Stunning plant.

After a thorough browse at https://inaturalist.ala.org.au/taxa/121634-Ptilotus/browse_photos and looking at many many photographs, I think this might be Ptilotus exaltatus.

I think this one is actually P. nobilis, quite similar to P. exaltatus but with more yellowish and duller flowers rather than pinkish.
